1. Mix 2 tbsp of ricotta cheese with salt, pepper, lemon zest and thyme.
2. Roll a pasta dough and add 1 tbsp of ricotta cheese mix on top.
3. Gently place a egg yolk on top of the ricotta cheese mix. Brush the edges of the pasta dough with egg wash.

5. Drop the ravioli in the boiling water with a pinch of salt and a tbsp of oil.
6. Remove the ravioli and prepare the butter sauce.
